Can a school lunch teach you to love Mother Earth? At All Saints’ Day School in Carmel Valley, that’s now the new philosophy behind the food that’s being served to students and staff. Earthbound Farm’s Farm Stand Café in Carmel Valley is now providing what may be the only 100 percent certified organic school lunch in the country, and one with almost no waste — the uneaten food and unbleached paper napkins are composted at the Farm Stand.
Not only are the lunches organic and healthy, they’re also pretty delicious. Students and staff are giving a big thumbs-up to whole wheat macaroni and cheese, roasted beets in the salad bar, and sweet potatoes and corn chowder, among other menu items.
“The middle schoolers have discovered they love beets,” said Cynthia McCoy, All Saints’ communications and public relations officer. “The lunches are introducing the students to ingredients they’ve never seen before, and now they’re embracing them.”
